Kharoube is used in North Africa for its medicinal virtues because, thanks to its high fiber content, it has a regulating effect on intestinal function and is used in cases of diarrhea or constipation in children. It is then administered in the form of an instant preparation, such as hot chocolate.
Carob flour is also used in certain drinks and sodas.
Carob, unlike its counterpart cocoa, contains neither theobromine nor caffeine, two alkaloids with an exciting action on the body.

- In Tunisia, it is used as a base for soft drinks called boga and El-Meddeb cider.
- In Lebanon, the fruit is boiled and its concentrate gives a sweet and creamy natural molasses (debs kharoube). Mixed with sesame cream (tahini), it is eaten with Lebanese bread. It is believed to have a deconstipant quality.
- Infant food: carob flour is used in baby milk powder as a thickener to replace traditional wheat flour. This type of thickener is recommended to combat childhood gastroesophageal reflux. This carob flour is supposed to be less allergenic than cereal flour.
