What are the benefits of millet?

1 – It is a good source of fiber

Like all cereals (wheat, oats, einkorn, etc.), it contains dietary fiber. These fibers are of 2 types:

insoluble fiber, which facilitates transit, increases the mass of stools and fights against constipation;

soluble fiber, which helps limit the passage of glucose into the blood and lowers the level of bad cholesterol, LDL.

Dietary fiber is also satiating, and its consumption is important for weight loss. However, fiber is present in lower quantities in millet than in other cereals.

2 – It is rich in vegetable proteins and iron

Like sorghum, it contains vegetable proteins. As part of a vegetarian or vegan diet, it is important to look for plant-based sources of protein.

However, it is not a complete source of protein because it does not contain all the essential amino acids. In order to have complete proteins, you will need to combine legumes (chickpeas, lentils, beans) or nuts with this cereal.

3 – It would protect against cardiovascular diseases and diabetes

It contains substances that play a protective role in the heart and blood vessels, in particular by limiting bad cholesterol (1). The latter is a factor favoring cardiovascular diseases.

Likewise, it limits the absorption of carbohydrates and would prevent type 2 diabetes. The soluble fibers, phytosterols and lignans present in millet would have this role in preventing these cardio-metabolic diseases. However, human studies remain to be carried out to prove this.

4 – It’s a gluten-free cereal

Like rice or buckwheat, consuming millet allows you to make varied gluten-free dishes, and replaces wheat very well.

5 – Eating millet will provide you with vitamins and minerals in good quantities

To be healthy, it is important to consume foods rich in trace elements and nutrients. The nutritional qualities of millet are proven. It contains :

magnesium, useful for muscle contraction (including that of the heart), and naturally anti-stress;

zinc, which contributes to the proper functioning of the immune system and the healing process;

phosphorus, which is essential for strong bones and teeth;

iron, which allows the transport of oxygen to the cells of the body.

How to consume it?

Once the millet seeds are cooked, all you have to do is cook them! You can make many savory recipes:

vegetable pancakes;

millet balls;

gratins with vegetables and cheese, or with meat;

as a replacement for semolina for gluten-free couscous or to accompany a tagine;

for stuffing vegetables in vegetarian cooking;

fried with vegetables (leeks, broccoli, carrots, etc.).

It is also cooked sweet:

in cake;

millet pudding, like rice pudding or semolina pudding;

in pudding with chocolate or vanilla, you can also add chia seeds.

Millet flour

Millet seeds are ground to form this gluten-free flour. This flour is more easily found in organic stores or on the Internet.
There are different types of flour: golden millet flour, brown millet flour, etc.
They can be stored in the refrigerator after opening.

How to consume it?

This flour makes it possible to make gluten-free breads and cakes. It can give bitterness to your preparations, which is why it is often mixed with another gluten-free flour such as rice flour for example.
