Mace (Bsibissa), also called “nutmeg flower”, is a spice that is obtained from the thin layer that surrounds the nutmeg. On a pharmaceutical level, mace is used in the composition of several preparations. Like many spices, mace is appreciated for its refined and delicate taste but also for its multiple virtues. It helps facilitate digestion, fight diarrhea, alleviate respiratory problems, promote sleep, fight nausea and relieve rheumatic pain. In cooking Mace is most often found ground. Used since ancient times, it is associated with fine fish such as perch and zander but also with white meats. For dessert, mace pairs pleasantly with chocolate or pan-fried fruit. It is also included in spice blends intended for use in traditional recipes such as tagines, sauces that accompany vegetables and meats. Directions for use Added in large doses to culinary preparations, mace can become toxic. That said, in moderate quantities, it is beneficial for the body.
