Karkade is made from dried hibiscus calyces (Hibiscus sabdariffa), widely enjoyed in Egypt, Sudan and West Africa (bissap). It makes a tangy, refreshing ruby-red drink, served hot or iced.

Preparation
Hot: one tablespoon in a cup of boiling water, 5 to 10 minutes. Cold: steep a handful of flowers in a litre of cold water for a few hours, strain and sweeten to taste. Not recommended for pregnant women.
